Summer Lemon Balm Chicken

Prep: 5 minutes | Cook: 8 minutes | Serves: 4


4 chicken breasts

2 tablespoons olive oil

2 tablespoons freshly chopped lemon balm

1 green onion, minced

salt and pepper


Preheat the olive oil in a large skillet or grill pan over medium-high heat.

Pat the chicken breasts dry with a paper towel, and then sprinkle one side with lemon balm, green onion, salt and pepper. Place them seasoned side down in the hot pan, and sprinkle the other side with the remaining lemon balm, green onion, salt and pepper (to taste). Cook for 4 minutes, flip, and then continue cooking for another 4 minutes. 

Remove the chicken from the pan and let rest for 5 minutes before serving. Garnish with leftover fresh lemon balm if you have it!
