Apple Cinnamon Oatmeal Crumble

Ingredients

6 apples, peeled and sliced thin
1/4 cup lemon juice
1 teaspoon vanilla
2 tablespoons + 1 teaspoon ground cinnamon

1/2 teaspoon ground cardamom
1/2 cup + 2 tablespoons granulated sugar
1/4 teaspoon salt
8 tablespoons salted butter

1 cup quick cook oats
1/4 cup all-purpose flour


Directions
Preheat the oven to 375 degrees and grease the bottom of a 9x9" baking dish. Set aside.

In a large bowl, combine the apples, lemon juice, vanilla, 2 tablespoons cinnamon, cardamom, 1/2 cup sugar and salt. Once all the apples are thoroughly coated, pour them into the baking dish. Dot the top of the apples with 2 tablespoons of the butter, broken into small pieces.

In a medium bowl (or in the large bowl you used earlier), sift together the flour, 2 tablespoons sugar and 1 teaspoon cinnamon. Stir in the oats and add the butter. Use your hands to press the mixture together - you want the butter incorporated enough to make the oatmeal/flour mixture look like pea-sized crumbles. Spread the crumble mixture evenly over the apples.

Bake for 45 minutes, or until the topping is golden and the apples are bubbly. Serve warm with vanilla ice cream or whipped cream.
