Potato Pancakes

1 20 oz  package fresh shredded potatoes (I use Simply Potatoes)
1/2 small onion, diced
salt and pepper to taste
1/8 t. baking soda
1 T. flour
1 egg
1 dash hot pepper sauce
1/2 t. garlic powder
Heat oven to 400*
Combine all ingredients.  Drop by large tablespoonful onto a hot oiled griddle and press down with the back of a spatula.  Cook until brown, flip, press down with a spatula and brown other side.   Place on an oiled or nonstick baking sheet and place in oven until crisp and ready to serve.
