Pasta with Tomatoes and Spinach

1 lb. Angel Hair Pasta, cooked according to package directions

1 small onion, diced

2 cloves garlic, minced

4 T. olive oil

1 pint cherry tomatoes

6 oz. Baby Spinach leaves

Salt and Pepper to taste

1/4 c. Parmesan Cheese, plus extra to serve at table


Heat oil in large saucepan over med high heat.  Add onion, garlic and tomatoes. Saute until onion is tender and tomatoes start to pop.  Add pasta to pan.  Season with salt and pepper. Add spinach leaves and 1/2 c. of the pasta cooking water.  Toss until spinach starts to wilt.  Add cheese and toss until all ingredients are combined.  Serve with additional cheese sprinkled on top.
