Beef Short Ribs

2.5 - 4 lbs. Beef Short Ribs (at least 1 rib per person)

1/2 c. flour seasoned with salt and pepper

1 T. cooking oil

1/2 c. onion, chopped

2-3 carrots, chopped into 1" pieces or a small bag of baby carrots

1 stalk of celery, chopped into 1/2" pieces

3 cloves garlic

1 bottle of dark beer or 1 cup of red wine

1 c. beef broth

 

Dredge ribs in seasoned flour. Heat cooking oil in large fry pan. Brown ribs on both sides in hot oil.

Place vegetables in bottom of slow cooker, top with browned ribs. Deglaze fry pan with the beer or wine. Boil until reduced by half.  Add broth and scrape up any brown bits stuck to the bottom of the pan.  Pour over the ribs and vegetables.  Cook on low heat for 8-10 hrs.
